I ...I hope I can revive this old thread here Chuck. I came across it through ADI Forum. I have a small rye distillery in Tasmania, Australia and I use a very similar souring method. I discovered it accidently while trying to lauter a rye mash, the same as Scotch is produced. Lactobacillus do have the ability to digest lactose, which they convert into lactic acid. I suppose the presence of lactobacillus indicate the presence of lactose, but they reduce the amount of lactose. But then the whole mess goes into the still, whose high temperatures kill everything.
